The 'nixtamalization' process releases vitamin B3, significantly increases the calcium and protein availability of the corn, significantly reduces phytic acids (which block our absorption of zinc, calcium and other important minerals), and significantly reduces 'mycotoxins' (present in a lot of corn around the world), by up to 90 percent.
